Mix up some love...

It's Monday morning again...and here I sit. Desperately trying to procrastinate doing the laundry and cleaning the house. And since it's been a while, I thought I'd share another fabulously healthy recipe from my arsenal.
And, since it's Valentine's Day, what better than a delicious dessert that's a little bit sour, a little bit sweet, but all around amazing (kind of like love is...)

Raw Key Lime Pie

Pie Crust:
1 cup soaked almonds
1 cup soaked walnuts
1 cup soaked and pitted dates (soak overnight)

Cinnamon or other spices to add flavor

Blend in food processor till nuts are chopped and dates are blended in. Press into two pans for thin crust, or 1 pan for a thicker crust. (these can be frozen for future use if you don't want to use both at once)

Key Lime Filling:
4 Avocados
1 cup lime juice
2 cups dates, pitted (not soaked)

Blend together in food processor and pour into pie crust and freeze for two hours, until fully set.
